It’s not often we come across an Italian restaurant specialising in gluten-free dishes. Many assume Italian food and gluten are inseparable, but Tina Persano, chef-owner at Brunswick restaurant Ciao Mamma, wants to put this misconception to bed. “Italy produces some incredible gluten-free pasta!” she says.
